Koral and Rupchanda BBQ (Grilled Fish)
Ingredients:
• Koral fish (Carp) – 1 medium size (whole or cut into steaks)
• Rupchanda fish (Pomfret) – 2 medium-size
• Garlic paste – 2 tbsp
• Ginger paste – 1 tbsp
• Green chilies – 5-6 (finely chopped)
• Lemon juice – 3 tbsp
• Yogurt – 2 tbsp
• Red chili powder – 1 tsp
• Turmeric powder – 1 tsp
• Cumin powder – 1 tsp
• Coriander powder – 1 tsp
• Salt – as per taste
• Mustard oil or olive oil – 3 tbsp
• Honey – 1 tbsp (optional)
• Fresh coriander leaves – for garnish
Preparation:
1. Clean the fish thoroughly, removing scales and guts. Make slits on both sides of the fish to allow the marinade to penetrate.
2. Prepare the marinade by mixing garlic paste, ginger paste, lemon juice, yogurt, green chilies, red chili powder, turmeric powder, cumin powder, coriander powder, salt, and mustard oil in a bowl.
3. Rub the marinade generously over the fish, ensuring it gets into the slits and inside the cavity. Let it marinate for at least 2-3 hours or overnight for better flavor.
4. Preheat the grill or BBQ.
5. Grill the fish for 15-20 minutes, turning occasionally, until the fish is cooked and has a nice charred appearance.
6. Brush the fish with a bit of oil or butter while grilling to keep it moist.
7. Garnish with fresh coriander leaves and lemon wedges before serving.
Koral and Rupchanda Fish Fry
Ingredients:
• Koral fish steaks – 500g
• Rupchanda fish (Pomfret) – 2 medium-size
• Turmeric powder – 1 tsp
• Red chili powder – 1 tsp
• Coriander powder – 1 tsp
• Cumin powder – 1 tsp
• Garlic paste – 1 tbsp
• Salt – as per taste
• Lemon juice – 2 tbsp
• Rice flour or gram flour (besan) – 4 tbsp
• Water – as needed
• Mustard oil or vegetable oil – for deep frying
Preparation:
1. Clean the fish and pat them dry with a paper towel.
2. Marinate the fish with turmeric powder, red chili powder, coriander powder, cumin powder, garlic paste, salt, and lemon juice. Let it sit for 30 minutes.
3. Make a coating mixture by mixing rice flour or gram flour with a little water to form a thick batter.
4. Dip the marinated fish in the batter, ensuring they are well coated.
5. Heat oil in a deep frying pan over medium heat.
6. Fry the fish in batches until golden brown and crispy. Make sure to fry both sides evenly.
7. Remove the fish and place them on paper towels to absorb excess oil.
8. Serve hot with onion rings, lemon wedges, and green chutney or sauce.
